Fried croquettes filled with crab meat, chili, and potato with sweet tomato-based sauce

Flat rice noodles, bean sprouts, egg, Lup Chong (a cured sausage), stir fried with a sweet soy sauce
Mains:
Snapper Laksa
Snapper in a creamy coconut chili broth, with rice noodles, fried shallots, bean sprouts and fresh coriander
Hainanese Chicken
Chicken breast poached in traditional spices, with seasoned rice, Chai Teow Kway a radish salad with a soy dressing, pickled cucumber, and a Hainanese chili sauce
Desserts:
Coconut Rice Pudding
Creamy coconut rice pudding with spiced mango jam, ginger ice cream and toasted coconut
Pandan Cake
Fluffy chiffon cake flavoured with pandan essence, served with dragon fruit puree, Kaya, a coconut cream and egg custard and peanut praline

How could we not do a Singapore Sling for tonight? This semi-sweet, sparkling fruity punch is a blend of dry gin, Benedictine, cherry brandy, pineapple, and lime juice, with a touch of Angostura Bitters, shaken over ice and strained into a tall glass – to give you a delightfully complex and refreshing flavour.
