Roasted Pork belly served w/ pork crackling, garlic and sweet potato mash, caramelized ginger and lime apples, and a pickled cabbage slaw
Braised Pineapple Chicken
Braised pineapple chicken thighs w/ steamed rice, pickled carrot and cucumber, grilled capsicum and eggplant and toasted coconut
Desserts:
Strawberry and Coconut Parfait
A creamy frozen dessert, flavoured with strawberries and coconut, served w/ almonds, white chocolate, vanilla-bean wafers, and a malt liqueur cream
Lemon Myrtle Damper
Lemon Myrtle damper bread w/ ginger syrup, grilled mango cheek, bush honey labneh and roasted macadamia nuts
