Sake & Miso Glazed Beef
Beef seared and glazed with sake and miso, served w/ tea-smoked mushrooms, sesame-dressed mustard greens, pickled radish and rice steamed in dashi stock
Shio Koji Salmon
Marinated, seared salmon fillet, a cucumber and daikon salad w/ ginger dressing, Nishime, vegetables simmered in a sweet soy broth and onigiri, rice balls stuffed w/ sour plum
Desserts:
Chocolate & Black Sesame Souffle
A soft and delicate baked souffle, that has been folded through w/ dark chocolate and nutty-flavored black sesame seed, served w/ a peach and cherry blossom sauce
Matcha Castella Cake
Green tea-flavoured fluffy sponge cake topped w/ sweet red bean syrup, fresh strawberries and cream whipped w/ yuzu
